You can activate the sacrifice ability (, Sacrifice this enchantment: Scry 2) while the enchantment is on the battlefield. Activating it requires paying 2W and sacrificing the enchantment as part of the cost; after the cost is paid, you Scry 2.
Sacrificing the enchantment as part of the cost means the triggered enter-the-battlefield ability (if it’s still on the stack) is not affected by this; the triggered ability already created its effects when it resolved. If you sacrifice the enchantment before it has entered the battlefield (for example, from the stack) you cannot, because you can only sacrifice permanents on the battlefield.
If the enchantment leaves the battlefield before its triggered ability resolves (for example it’s destroyed in response to its own enter trigger), the triggered ability still resolves and will still create the tokens and grant the life, because the trigger references the event of it entering, not the enchantment’s continued existence.
